Default Kitchen Confidential; Adventures in the Culinary Enderbelly

Has anyone here ever read Kitchen Confidential; Adventures in the Culinary Enderbelly by Anthony bourdain?

If you're a cook at a restaurant and smoke weed, this book is amazing, one book that I actually want to keep reading through.

Talks about every kitchen he's worked in, alot of shit he's learned, crazy people that are in kitchens, alcaholics, alot of drug usage, most of it being him. Funny ass book but has some valuable lessons for being in the food industry aswell.

You know it's sittin in my mom's book case right now, it's only about ten feet away from me. I've been meaning to read it for awhile (actually ever since i wanted to be a chef like two years ago) and i think i will finally pick it up now that you mention it's a good read. Unforunately, i no longer aspire to be a chef.

After reading that book and having a really stressful shift today.. I don't think its my calling either even though I'd thought of getting experience in a restaurant and possibly going to college for culinary arts.

Chefs have to work like 12 hour days almost every day, and do a lot of confusing and stressful things, not only cook.

I'm being trained as a cook right now, and I get high every day with my co-workers, but when everyone is burnt out, orders are coming in like mad, I'm new to the whole thing so I fuck up some things that I'm suposed to do, and it happens alot more often if I'm burnt out. I screw up alot anyways and since I don't know how to make anything and I try to be useful it can piss people off cause I can sometimes just be in the way.

I'm learning to make new shit every day though.. alot to learn. Only been there for a week but half the time it was to busy so I was put on dishes.. been over staffed so I've been sent home early and everything.

If I fuck up alot or ask questions the other line cooks get pretty pissy and it can get pretty humiliating, but I know its because they're stressed as hell about people changing orders, having to do all the shit they normally do, then right at the end of their nerve I put a pizza on a wrong place or something and they fucking snap. Shortly after followed by aplolgies and dope smoking after the rush is over.

Sounds like a very stressful and demanding job. It's nice that you get to toke with your co-workers though. Maybe someday i'll have a job like that.

Anyway what kind of restaurant do you work at? Is it like a fancy, sit down type of place or a pizza place or what?

I've worked at several different restaurants and bars over tha last 10 years...hell I even got some culinary training under an executive chef for a while. Gotta say, i know it sounds wierd, but tha rush you get from a dinner service is damn near unmatched. I've done some pretty extreme cooking (only cook on a holiday, cooking in tha dark/tornado warning, being lead cook with only newbies...) and it all ends with a feeling of euphoria that I became accustomed to. One of my favorite, most satisfying times would be after a 12-16hr workday at a very busy Cracker Barrel, walking out into tha winter air with three coworkers on tha way to get baked, and feeling tha grease/sweat harden on my face. We'd then go to tha "spot" and wash up, kick back, and totally relax to a few bowls or blunts and a couple of great movies.
Tha stress is killer though. Everyone wants something now, their way, hot and extra shit free. You got tickets spewing out of tha printer constantly, waitresses "reminding" you of what they forgot to put on tha ticket, call out's for times, setup or 86's/extinctions. You have to balance cooking 14 steaks (4 med rare, 7 med well, 1 well done, 1 medium, and 1 blue rare) with an even dozen chickens, two fish dinners...sometimes you even gotta throw down on some pancakes and THEN still make sure there are enough sides, tha portions are correct, everything is fresh, put in tha right spot...top it off with accidentally making someone sick if you undercook tha wrong thing.........hell yeah we are gonna use drugs/alcohol on a mass basis. I've actually been told by that aforementioned exec chef that if i didin't have a vice right now, i should pick one up if I plan on being in this industry.

The restaurant I work out is like a sit down type thing with waitresses and whatnot. Sell steaks, pastas, foccasias, subs, pizzas and alot of athoer various things.

It's a frachise so the food at every restaurant has to be the same, so everything is put into portions and frozen or refrigerated. So for noodles and cliced up chicken you just have to dump the bags out after microwacing them. The pastas though you have to add alot of other ingrediants.

I'm starting to get a hang of cooking too. I went a whole shift without smoking bud except for in the last 15 minutes, and looked the menu over and the ingrediants over a little bit. Haven't screwed up or pissed anyone off for two days haha. There isn't usually ever a day that there isn't weed smoked there.

Negaduck, since you've worked in restaurants you would know the werid buzz a kitchen has. You should definitly read that book, you would read it from start to finish without ever putting it down. It's one book I was able to read high where my thoughts would be so put into the book that they wouldnt go astray and on to random thinking, ans that's something. He shows the weird buzz of a restaurant right well, and it's stories of him and his co-workers blazing, doing pranks, doing alot of various other amphetamines and stuff.

Work today was pretty intense, cause yesterday I was really baked and passed a cop after work while I was on my way over to a friends to smoke more weed(guy told me if I broght him a pizza he would smoke a bunch of weed with me, and someone screwed up and order so I took that pizza ) and I got kind of paranoid when I couldn't find my friends place, and when I finally did I got out and was carrying something and then I some how idiotically managed to slam the door directly onto my thumb nail with full force. I winced, yelled fuck then just tried to ignore the throbbing pain. So I go in my buddys place and all the sudden i feel warm liquid dripping all over my hand. Looked down and blood was everywhere, I showed him and told him I crushed my finger. Went to his kitchen and started feeling super dizzy and nausious, I was going to colapse for some reason so I fell onto a chair, had a huge head rush for like 10 minutes. Got blood all over my chefs jacket. Then took more hits from the bong... so my finger was pretty sore while lifting things and whatnot at work.

I love Anthony Bourdain! Do you ever catch his show on the Travel Channel called No Reservations? Or how about when he used to have a show on the Food Network?

It's a good show, he does basically the same thing you read about: drinks, smokes, and eats a lot of food
