| Nah... when you cook, cook good! Here's my Totally Tuscan Cheese Sandwich Recipe, the complete opposite of a Ghetto Grilled Cheese (yuck!): 2 Fat Slices of some good Artisan French Bread or Sandwich Bread 5 Pieces of misc. cheese (no American allowed as this is a REAL sandwich; lol) 1 Fresh Onions 1 Fresh Pepper 1 Fresh Tomato 1 Clove of Garlic Few pieces of spinach 1 tbps Crushed Basil Leaves 1/2 tbsp Crushed Oregano Leaves 1/2 tsp Sea Salt Butter OK; think that's it. A few things up front: use quality ingredients! You can only get out what you put in. I use all Organic ingredients and other than the health and environmental benefits I'll tell you - the flavors are out of this world! Heirloom tomatoes, Russian garlics, Italian Red Torpedo onions - these are what separate your average everyday meal from a REAL meal. So... Organic = Good; Fresh = Good, Farmers Market = GOOD. So I make my own bread and use that; I'd recommend this. It's out of the scope to talk about bread making here, but PM if if you'd like help or tips as I bake a lot of Organic Artisan Old World type breads. I cut the bread into some fairly thick 3/4-inch slices. I butter each side and the basil and oregano to each side. I then sprinkle the salt on each side and follow that up with the garlic on each side. Press the garlic into the butter lightly so it sticks when cooking/flipping. Put them on the pan, load up with cheese, peppers, onions, tomato and the fresh spinach. Put together into a sandwich and fry it at a low-medium heat.. .the lower the better... and let it slow roast for 10 minutes. Allow it to overcook slightly so that the edges of the bread are a little burnt/dark brown; overcooking will give you that Tuscan crunch. Cut, eat and enjoy!
