Chocolate Brownie Oatmeal Canna-Cookies


(The dough should chill for at least an hour, so plan ahead.)


2 cups (12 ounces) semisweet chocolate chips

1 (8-ounce) package cream cheese, at room temperature

½ cup (1 stick) canna butter, at room temperature

1 cup firm-packed light brown sugar

½ cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

11/2 cups all-purpose flour

11/2 teaspoons baking soda

3 cups uncooked oatmeal (either quick or old-fashioned)

1 cup chopped nuts (we like pecans, but walnuts or cashews are fine, too)



Melt chocolate in a microwavable bowl on high power 1 to 2 minutes, stirring every 30 seconds, or place in top of a double boiler over hot, not boiling water, stirring occasionally until melted.

In a large mixing bowl, beat together cream cheese, canna-butter and sugars until creamy. Add eggs and vanilla and beat well. Stir in melted chocolate. Stir flour and baking soda together and add to chocolate mixture. Lastly, stir in oatmeal and nuts, mixing well. Cover and chill at least 1 hour or until easily handled.

When ready to bake, preheat oven to 350 degrees. Shape dough into 1-inch balls and place about 3 inches apart on ungreased baking sheets. Bake in center of oven 8 or 9 minutes until cookies are barely set. Centers should still be slightly moist. Do not overbake. Cool 1 minute on baking sheets, then remove to wire racks to cool completely. Makes about 6 dozen.

Per cookie: 85 calories, 44 percent calories from fat, 4 grams total fat, 10 milligrams cholesterol, 2 grams saturated fat, 1 gram protein, 12 grams carbohydrates, .79 grams total fiber, 30 milligrams sodium, 11 grams net carbs, 7 grams total sugars.
