This recipe is DELICIOUS!!!

You will need:

2 Mahi Mahi Steaks (Dolphin)
1/2 - 1 lb of Sea Scallops (Bay Scallops will do but they arent as juicy and sweet!)
1 1/4 cup Butter or Margarine
1/2 cup Parmasean Cheese
Juice of a small Lemon (or 2 - 3 Tablespoons of the bottled stuff)
Fresh Ground Black Pepper
Blackening Seasoning (I prefer Paul Prudhomme's)
Lemon Pepper Seasoning
10 oz Package of Yellow Rice
1/8 - 1/4 oz of finely chopped or powdered Marijuana

Preheat Oven to 450. Then, begin cooking the Yellow Rice according to the instructions on the package.

Once the rice is covered and simmering cover both sides of the Mahi Mahi steaks with the Blackening Seasoning, to taste. I tend to like a lot of this delicious seasoning! Spray a broiler pan with non stick spray, place Mahi steaks on the broiler pan and place into 450 degree oven.

Sprinkle Lemon Pepper Seasoning on all sides of the scallops coating them thoroughly. Heat skillet on High until the pan is very very hot. Once the skillet is fully heated dump scallops into pan and let them sear on one side for a minute. (NOTE: Some of the seasoning will brown and stick to the bottom of the pan. Once you add the butter you can just scrape it off and mix it in the sauce, it will dissolve.)

Once they have seared on one side and start to form a slight golden brown crust on the edges add the butter and turn heat down to Medium. Once butter is melted add the Marijuana and stir constantly. After the mixture has simmered (NOT BOILED) for a while and the butter has started to take on the smell and color of the greens, add Parmesean Cheese to taste. I generally use 1/4 cup or so but some people like more, just add a bit at a time until you find whats right for you!

After you have the right amount of Parmesean Cheese, add all of the Lemon Juice. This will throw the taste out of whack for now, so you may need to add more Parmesean Cheese to the sauce. (You may need to spend a few minutes balancing the Lemon and Parmesean flavors with the sweet greens, but believe me its WELL worth it!!) Grind fresh Black Pepper into sauce to taste. Let the scallops and sauce simmer until the rest of the meal is complete. (You should check the Mahi Steaks at 15 minutes, and every 5 minutes after that if they are not done. Properly cooked Mahi will be flaky and tender once fully cooked)

Once everything is done pile Yellow Rice on two plates, Put a Mahi Mahi Steak on each pile of rice, and pile equal amounts of the Scallops and Sauce over each pile of food.

hey dude, sounds great but can we substitute any type of fish for the mahi mahi??

Yes, this recipe will work well with any kind of firm fish. I will name a few types that I use but since you're probably in a different part of the country I might not name anything near you.

Cod
Grouper
Red Snapper
Amberjack
Shark
Redfish
Trout (Weakfish in some parts)
Flounder (at least 1/2 inch thick)

Basically any firm meaty fish will do well with this recipe! Enjoy!

OHHHHHH... heh I just looked at your location, thats pretty close to me, so you should be able to find any of the types of fish I mentioned!

Heeeeyy, I just remembered something after taking a couple tokes, You can use any of those other kinds of fish, but Mahi Mahi is YUMM!!! The 2nd best would be Red Snapper, 3rd would be Redfish, 4th Amberjack

If you can get a FIRM Grouper filet then Grouper would be 3rd right after Red Snapper. But most of the Grouper we get around here are Red Grouper which dont have very firm flesh. Gag Grouper would work quite well though...

My mouth is watering already . I'll have to try this recipe this weekend, my parents are out of town and I'm cooking up brownies, cookies and now this! I'll be in the kitchen all weekend!

Don't worry, I'll have my story real life stories forum on what happened and how good the recipes were in the recipe forum . I can't wait, I'm also off school tommorow so I'll be making the brownies tommorow and pot cookies on Saturday and the whole meal deal for myself on Sunday. I can't wait!
