Default More Thanksgiving

Apple Pecan Cheesecake

1-1/2 cups graham cracker crumbs
1/4 cup butter, melted
2 Tbsp. brown sugar
4 pkg. (8 oz. each) cream cheese, softened
1-1/2 cups firmly packed brown sugar, divided
1 tsp. vanilla
1 cup sour cream
4 eggs
4 cups chopped peeled apples (about 3 medium)
3/4 cup chopped pecans
1 tsp. ground cinnamon

PREHEAT oven to 325°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Mix crumbs, butter and 2 Tbsp. brown sugar; press firmly onto bottom of pan.

BEAT cream cheese, 1 cup of the brown sugar and the vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust. Mix remaining 1/2 cup brown sugar, the apples, pecans and cinnamon; spoon evenly over cheesecake batter.

BAKE 55 min. or until center is almost set. Cool. Refrigerate 4 hours or overnight. Let stand at room temperature 30 min. before serving. Lift cheesecake from pan, using foil handles. Cut into 16 pieces. Store leftover cheesecake in refrigerator.


**Jazz it up by drizzling some caramel topping over each piece of cheesecake just before serving.

I like food you can just put in a pan and boil the bejesus out of.

On that note, The Curry:

Challottes
Onions
Garlic
Tomatoes
Beef or lamb cutlets
Green chillies
Lemon or lime
Coriander
Coriander seed
Cumin seed
Mustard seed
Turmeric
Black Cardamom

Whizz your challottes, turmeric, green chillies, lime or lemon juice and coriander into a paste. Seal your meat in a wide, deep-sided pan, drain it for the love of your arteries and place it to one side. With a tablespoon of oil, crack (as in 'fry') your mustard seed, cumin seed and coriander seed. Throw in your garlic and onion and brown before cooking them for about five minutes in your curry paste and your meat. Top it up with water and chopped tomatoes (not tinned, for the love of christ!). Simmer, cover and leave to reduce.

Best served with rice and lager.

Default Cinnamon Streusel Quick Bread

I love quick breads, like this one, and of course banana nut bread. I prefer dark brown sugar over light brown sugar, for the most part. Dark brown sugar is better in this recipe.


CINNAMON STREUSEL QUICK BREAD

3 c. baking mix
1/2 c. sugar
1/3 c. flour
1 c. milk
1 egg

STREUSEL:

1/3 c. brown sugar
1 1/2 tbsp. flour
1 tsp. ground cinnamon
2 tbsp. cold butter
2/3 c. chopped nuts (optional)

Mix the streusel ingredients together until it becomes crumbly. Set aside. Combine baking mix, sugar, flour, milk, and egg. Beat for 1/2 minute. Spread half of the batter into greased loaf pan, 9 x 5 x 3 inch. Sprinkle the streusel mixture on top. Place remaining half of batter in pan, spreading evenly. Using knife, randomly swirl batter the length of pan. Bake at 350 degrees for 55 minutes or until wooden pick comes out clean. Cool on wire rack before slicing.

**Doing the lattice pie crust can be difficult for beginners, so you don't have to do it, but I do.

Gobbler Cobbler Pie

1 package long-grain wild rice (recommended: Uncle Ben's)
1 medium onion, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 package fresh sliced mushrooms
1 tablespoon oil
1 can French style green beans, drained
3 cups cooked turkey, chopped
1 cup mayonnaise
2 cups grated Cheddar
1 small can sliced water chestnuts, drained
1 teaspoon poultry seasoning
1 cup sour cream
1 package preformed pie crust
1 egg, beaten

Preheat oven to 350 degrees F.
Prepare the rice according to package instructions and set aside. Saute onions, peppers, and mushrooms in oil and set aside.

Combine all ingredients except 1 cup of cheese and pie crust, into large bowl and mix well. Pour into greased 9-inch glass pie plate. Top with remaining 1 cup cheese and set aside.

Roll out pie crust, cut into 1/2-inch wide strips and cover dish in lattice design, then brush dough lightly with egg.

Place in 350 degree F oven for 30 minutes, when top is golden brown, remove, let cool, and enjoy.

This dish is an excellent way to use holiday turkey leftovers, plus it freezes well.

Default Instant Chocolate Mousse

I make this a lot! I'm seriously contemplating making some before dinner.

Instant Chocolate Mousse

3 cups mini marshmallows
1/2 stick unsalted butter, softened
9 ounces best quality semisweet chocolate, chopped into small pieces
1/4 cup hot water from a recently boiled kettle
1 cup heavy cream
1 teaspoon vanilla extract

Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
Put the saucepan on the stove, over heat, though keep it fairly gentle, to melt, stirring every now and again. Remove from the heat.

Meanwhile whip the cream with the vanilla until thick and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.

Pour or scrape into 4 or 6 glasses or small dishes and chill until you want to eat. The sooner the better!

Default Banana Nut Bread

I have a loaf baking right now. I also made some honey butter to go with it.

1/2 cup butter, softened
1 cup sugar
2 eggs, beaten
2 cups all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 1/2 cups mashed banana (4 medium, ripe to over-ripe)
1/2 cups coarsely chopped pecans

Cream butter in a medium mixing bowl; gradually add sugar, beating well. Add eggs, flour, soda, salt, bananas, and pecans; mix well. Pour batter into a well-greased and floured 9x5x3 loafpan. Bake at 350 for 55 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan, remove bread from pan, and cool completely on a wire rack. Slice and serve. Makes 1 loaf.

Honey butter:

1 stick (softened) unsalted butter
1/2 cup honey

Mix ingredients together until well incorporated. Put in the refrigerator until it hardens.

I have decided to share the only recipe that I know. Although I realize that there is already a peanut butter cookie recipe this is one that I make all of the time (in fact it is getting kind of old how often I make it for every family function).

There are only three ingredients and most of us have them on hand anyway....

1 cup of peanut butter

1 cup of sugar

1 egg


Mix them together...roll them into balls, smuch them with a fork and stick them in the oven for about 8 minutes at 350 degrees. (I always have to watch the first batch closely though to get the timing right because they go from almost done to burnt pretty quickly).

If you feel like getting fancy you just skip the fork smushing and stick a hershey kiss in the top of them while they are still hot.

Seriously.....these are the best peanut butter cookies ever! Of course I tend to like my peanut butter cookies to taste like peanut butter and the sweetness doesn't hurt. Everyone has different tastes but since I don't bake often (or really at all) I like this recipe the most because it is easy to remember and I don't usually have to make a separate shopping trip for ingredients. They usually get eaten at every holiday too and what does come home with us gets devoured in a couple of days anyway.

Just thought I would share......

I really do have to come up with a new recipe though. I am getting sick of making them after 3 years of them.

Naan Delight

The first, and most important ingredient is the Naan bread, it is important, because there are many kinds of Naan bread out there, and if you get the wrong kind, it will not taste the same.

The brand is: "Trader Joe's brand Whole Wheat Tandoori Naan." This type of Naan bread is different than other Naan bread Ive had, but the results are fabulous! (The only place you can get it is at Trader Joe's) You can find other Naan bread at most organic stores, but it might not be the same.

Ok, so you take the bread and cut it in half, so that it fits into your toaster.
Toast the bread until it is just slightly crispy.
Slather on as much butter as you like, then drizzle honey over the entire thing...a nice amount...like syrup on a pancake.

What you get is a sweet, gooey, soft, yet crispy treat that reminds me of waffles, with a twist. It is perfect for the munchies, because it is extremely fast and easy to make, it only takes about 5 miniutes. Also, food discovered when you have the munchies, is always better.

Naan bread, for those who are wondering is an east Indian flat bread, that is baked in a tandoori oven.

Thank you to those of you that have posted recipes!! Goodgirl, I made a batch of peanut butter cookies, using your recipe. They are awesome, but rich as hell! I can't eat more than 2 at a time.
