Default Chocolate Fudge

**I'm making this today.

Chocolate Fudge

12 ounces 70 percent dark chocolate, chopped or 12 ounces semisweet chocolate, chopped
1 (14-ounce) can condensed milk
Pinch salt


Melt the chopped chocolate, condensed milk and salt in a heavy based pan on a low heat.

Pour this mixture into a 9-inch square foil tray, smoothing the top.

Let the fudge cool and then refrigerate until set. You can then cut into small pieces approximately 3/4 by 1 3/4 inches or cutting 8 by 8 lines in the tin to give 64 pieces.

Once cut you can keep it in the freezer, no need to thaw just eat straight away.

Default Peanut Butter Fudge

1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar

Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Default Coconut Cookies

I found this recipe for Coconut Cookies and thought I would go ahead and share it. It seems simple to make. I am surely going to try it for Christmas.

This recipe makes about 2 1/2 dozen cookies

2 tablespoons unsalted butter
2 1/2 cups unsweetened shredded coconut
2 large eggs
3/4 cup sugar

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.

2 Melt butter in a medium saucepan. Remove from heat and add shredded coconut, mixing well with rubber spatula.

3. In a large bowl, beat eggs with an electric mixer on medium speed, just to blend. Beat sugar, then increase the speed to medium-high and beat until light and fluffy. Stir coconut until thoroughly mixed.

4. Drop rounded teaspoons of the batter onto the prepared baking sheets, spacing them about 1 1/2 inches apart. Bake for 10 minutes, until the tips of the cookies are pale gold. Slide the parchment papers, with the cookies on them, onto wire cooling racks and let the cookies cool completely.

I also found some recipe's for your pets. I thought that was pretty cool. With all of the recalls lately I thought this would be a good idea.

Kid-Friendly Canine Cookies

3 (2.5 ounce) jars of baby food (vegetable or meat varieties)
1/2 cup plain Cream of Wheat

In a mixing bowl thoroughly combine ingredients. Using a teaspoon, drop mixture onto a dinner size plate covered with wax paper. Cover with paper towels or paper plate.

Microwave on high setting for 4-5 minutes. Remove and cool completely before serving. Refrigerate remaining cookies in a air-tight container.



Here is one for the kitties

Cat Treats

7 ounces sardines, (drained if canned) mashed
1/2 cup plain wheat germ
1/4 cup dry non-fat milk
non-stick cooking spray

Preheat oven to 350 degrees F. In a mixing bowl, thoroughly combine all ingredients. Form mixture into small, 1/2 inch sized balls. (Should make approx. 2 dozen) Place balls evenly on greased cookie sheet. Gently flatten each ball with a fork.

Bake 5-10 minutes, or until golden brown.

Remove and cool completely before serving. Store the remaining cookies in an air-tight container.

I know this thread is for human recipes but I thought maybe some would enjoy making these for their furbabies.

I had this awesome homemade chili verde that a friend of a friend brought over to my house, and it got me intrigued. Does anybody have any good chili verde recipes?

Brown the meat in lard or oil in batches with onions and pressed garlic. Drain meat and add to chili pot. Add diced green chiles. Return pot to simmer.

After 2 hours, add half of finely minced green peppers. Add salt, as desired. Taste and adjust, adding additional minced peppers as desired. After 2 1/2 hours thicken or thin, as needed. After 2 3/4 hours, adjust salt and other seasonings as needed.

Just before serving, add lime juice and cilantro.

Default Stuffed Red Peppers...it's what's for dinner. :)

Stuffed Red Peppers

4 large red bell peppers
3/4 pound ground chuck
1/2 pound ground pork
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons beef bouillon granules
2 teaspoons House seasoning, recipe follows
1 cup cooked rice
1/2 cup jarred cheese and salsa
1/2 cup sour cream
1 cup diced tomatoes
1/2 cup chopped green onion tops
1 tablespoon soy sauce
1 cup hot water

Preheat oven to 350 degrees F.
Start by cutting the peppers in half lengthwise, leaving the stems intact, and halving them also. Remove the seeds and ribs inside the peppers.

Using a hot skillet, saute the ground beef, pork, onion, garlic, 1 teaspoon of bouillon granules, and house seasoning together. Saute until onions become translucent. Drain the fat off. Add the rice, cheese, sour cream, tomatoes, green onion tops, and soy sauce. Mix well and stuff the mixture into the peppers. In a small bowl, mix the hot water and the remaining bouillon granules. Pour this mixture into a shallow casserole large enough to hold all of the peppers. Place the stuffed peppers in the dish, cover with foil and bake for 25 to 35 minutes. Remove the foil and spoon the juice from bottom of the casserole over the top of the peppers. Bake for an additional 10 to 15 minutes.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months

Default Applesauce Bread & Creamy Apple Butter

Applesauce Bread

1/2 cup (1 stick) unsalted butter, softened
1/4 cup dark brown sugar
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon allspice
1 teaspoon vanilla
1 cup applesauce
2 large eggs
1 cup raisins
1/2 cup chopped walnuts


Preheat the oven to 350 degrees F. Grease and flour an 8 by 4 by 3-inch loaf pan.

Cream the butter and brown sugar. Add the remaining ingredients except the raisins and nuts. Mix well until blended. Stir in the raisins and nuts. Pour into the loaf pan. Bake for 60 to 65 minutes.



Creamy Apple Butter

1 (8-ounce) package cream cheese, softened
1 cup apple butter

Whip the cream cheese and apple butter together. Serve with bread.
