Frightfully Delicious Chocolate Cupcakes

Ingredients:

2 cups (12-oz. pkg.) semi-sweet chocolate morsels, divided
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 cup 100% Pure Pumpkin (canned)
1/2 cup vegetable oil
1/2 cup milk
3 large eggs
1/2 cup Halloween candy corn (about 40 to 50 pieces)
1 container (16 oz.) prepared white frosting

Directions:

Preheat oven to 350º F. Paper-line 20 muffin cups.

Microwave 1 cup morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

Combine flour, baking soda and salt in small bowl. Beat sugar, pumpkin, oil, milk and eggs in large mixer bowl until smooth. Beat in melted chocolate. Stir in flour mixture. Spoon into prepared muffin cups, filling 2/3 full.

Bake for 22 to 27 minutes or until wooden pick inserted in centers comes out clean. Cool in pan for 10 minutes; remove to racks to cool completely. Frost cupcakes and top with pieces of Candy Corn Bark.


FOR CANDY CORN BARK AND FROSTING:

Line baking sheet with wax paper.

Microwave remaining morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

Pour onto prepared baking sheet. Spread into 8-inch square. Sprinkle with candy corn. Tap sheet several times to settle candy corn into chocolate. Refrigerate for 20 minutes or until firm. Break into 20 pieces.

Combine frosting with red and yellow food coloring in medium bowl to create orange colored frosting, if desired. Frosting may also be left white.

Tip: Bark can be made the day before hand and kept in the refrigerator.

Deluxe Halloween Mud Bars

Ingredients:

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed brown sugar
1/2 cup (1 stick) butter, softened
1 teaspoon vanilla extract
1 large egg
2 cups (12-oz. pkg.) semi-sweet chocolate morsels, divided
1/2 cup chopped walnuts
Halloween candy corn

Directions:

Preheat oven to 375° F. Grease 9-inch-square baking pan.

Combine flour, baking soda and salt in small bowl. Beat sugar, butter and vanilla extract in large mixer bowl until creamy. Beat in egg; gradually beat in flour mixture. Stir in 1 1/4 cups morsels and nuts. Spread into prepared baking pan.

Bake for 20 to 23 minutes. Remove pan to wire rack. Sprinkle with remaining morsels. Let stand for 5 minutes or until morsels are shiny; spread evenly. Top with candy corn. Cool completely in pan on wire rack. Refrigerate for 5 to 10 minutes or until chocolate is set. Cut into bars.

I just took my pecan pie out of the oven, and it smells so good!! I can't cut into it until it cools completely, though.

Ingredients:

1 tablespoon extra-virgin olive oil
2 pounds lean ground sirloin or ground turkey
1 onion, chopped
1 tablespoon steak seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 tablespoon chili powder
3 tablespoons dark brown sugar
3 tablespoons Worcestershire sauce
1 (14.5-ounce) can tomato sauce
9 soft burger rolls

Directions:

Heat the extra-virgin olive oil, a turn of the pan, in a deep skillet over medium-high heat. Add meat and crumble as it browns.

Add the onions to the pan and cook to soften, 5 to 6 minutes more. In a bowl mix the spices, sugar, Worcestershire and tomato sauce. Pour sauce over the meat and simmer a few minutes to combine flavors. Slop onto buns and serve.

Little to much sugar for a burger for my opinion.
But hey, recipes are guideline's

Bacon Cheeseburger Roll-Up

Ingredients:

1 lb. lean ground beef
4 slices bacon, chopped
1 small onion, chopped
1/2 lb. (8 oz.) Velveeta pasteurized prepared cheese product, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust

Heat oven to 400°F. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add Velveeta; cook until melted, stirring frequently. Cool 10 min.

Unroll pizza dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.

Bake 20 to 25 min. or until golden brown.

1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups water
1/4 lb. (4 oz.) Velveeta pasteurized prepared cheese product, cut into 1/2-inch cubes
2 cups frozen broccoli florets
12 manicotti shells, uncooked
1 lb. boneless skinless chicken breasts, cut into thin strips
1/4 cup fresh grated parmesan cheese

Heat oven to 400ºF. Microwave soup, water and Velveeta in microwaveable bowl on HIGH 3 min. or until Velveeta is melted and mixture is well blended, stirring after 2 min.; pour 1/3 into 13x9-inch baking dish. Set aside. Add broccoli to remaining soup mixture.

Stuff manicotti with chicken; place in baking dish. Top with remaining soup mixture and Parmesan; cover with foil.

Bake 45 to 50 min. or until manicotti is tender and chicken is done.

Ingredients:

1 cup vegetable oil
2 cups sugar
3 eggs
2 cups flour
3 cups diced apples
1 cup chopped pecans
1 cup raisins
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves

Preparation:

1. Preheat oven to 350 degrees F.

2. Lightly grease a 9-inch by 13-inch pan or spray with non-stick cooking spray.

3. Combine oil, eggs and sugar. Mix well.

4. Sift together flour and spices.

5. Add to other mixture and beat well.

6. Add apples, vanilla, raisins and pecans. Blend well.

7. Pour into prepared pan and bake for 45 to 50 minutes until it tests done with a toothpick.
