Question Best On-The-Road Recipe?

In 11 days (!!!) I am leaving to go on a road trip... I'm basically going around Canada and ending up in BC, via a Greyhound ticket which gives me anywhere in Canada for one month... along with a little hitchhiking.

The initial ride until we get to BC will be a week long, we're taking our time to get up there and seeing what excitement the prairies has to offer

Between me and another person, we will have 2 ounces of three different varieties to take with us - until we find some BC bud. We plan on packing a 'special' lunch for the Greyhound to get us there, we were thinking about just going for a lot of brownies or cookies, but I want something else to go with it, as I've had cookies so much they make me sick just thinking about it . I'm going to be using 1/2-1 ounce in total for cooking, but I'm not sure what to make.

Anyone know of any recipes which will keep for almost a week (aside for cookies)? Panama's Meatloaf sounds amazing and would be a nice hearty change than all the crap I'll be eating on the way, but could it keep for a few days in a small cooler?

Nutrition would be good, because I find that food can actually affect my overall mood... if I don't have access to fresh food and have to eat McCrap or whatever for a few days it makes me feel nasty

Make up a batch of Canna-Oil (just like cannbudder only in oil form.

Now here's some ways to use it:

1)Mix with = parts balsamic vinegar.
Add italian seasoning and VOILA = Vinnagrette for all your healthy salads -- from McD's, etc. Fast food places have lots of salads these days.

2)Use canna-oil on your toast with jam in the morning instead of butter

3) Add cannoil to spaghetti sauce or just toss with pasta and minced garlic and parmesan cheese.
