It's basically the frequency of the light being reflected off of the leaf. The frequencies that aren't absorbed are reflected - your eyes decode that frequency as the color green that you see.

There are billions of frequencies that humans don't have the ability to see (Everything outside the "visible range" on the electromagnetic spectrum.
