The different tastes of certain strains of cannabis are a product of controlled-breeding regimens implement by the breeder. The flavor and smell of Cannabisis a product of five substances: mono- and sesqui-terpenes, alpha- and beta-pinene, limonene, myrcene, and beta-phalandrene. The amount of each substance relative to the others will determine the flavor and smell.

I just want to share my experiences here, it may be the reason of cutting cannabis in different time during their cultivation. I have read online that if you will cut those in a fixed time say after 8 weeks, it will be really great to smoke. :)

Your kind of correct..It has to to with the breeding so your right there..

But then after that breeder sells his seeds..It's left up to the grower to get the right smell, taste.

different methods will produce different results..Obviously organic and veganic growing will taste the best..And for those hydro growers..Flushing will make a huge difference..

And then your stilll not done..You have to dry, and cure..Done wrong and the whole process was for crappy tasting buds..And starting over, many growers wil do the exact same thing..But if done wrong, and they wonder why this strain, tastes and smells different than his buddy with the same exact strain.
